A gracious space with embroidered bistro chairs, where everything rides on the talented chef, Adrien Cachot (ex-Troquet, Petit Pan and Saint-James in Bouliac).
The other day at lunch, on the €28 menu: marinated beef heart (the actual heart, not the tomato!) cut into thin quasi-raw slices, crisp radishes, the sweetness of sour cream and spicy harissa; then a harmonious and flavorful cod filet with white asparagus, moistened by a light soubise and a mussel emulsion, sprinkled with charred onion powder; before an original dessert made up of avocado and cilantro mousses, with a cocoa crisp. This is one of the most beautiful décor Paris has offered us in ages…. Sitting on both rue and Galerie Vivienne, the inseparable Julian Ross and Alexandre Giesbert (Roco in the 17th arrondissement) have given the old Jean Paul Gaultier boutique a makeover with peacock blue velvet benches, green marble-topped tables and green walls.
The final touch was a gigantic mirror (ideal for dizzying selfies) and JPG- (or Jean Genet) inspired waiters dressed in marinière stripes. As for the kitchens (open, central, spectacular!), they are bustling both in front of and behind il forno, where incredible pizzas sizzle. Also : braised and stewed carciofi sprinkled with bottarga and olive oil, or linguine with lemony butter and a tender sea bream tartare. You will find as well very good pizza.
